I have been loving using sweet potatoes lately to make desserts, like this sweet potato bread and these sweet potato brownies that have gone mega viral on social. In a bowl, add the mashed potatoes, coconut oil, eggs, vanilla, brown sugar, and coconut sugar. Using a whisk, mix everything well to combine. Set aside.
