You will love the twist on this overnight oats recipe. Coffee! It’s like having a pumpkin pie latte for breakfast. This easy pumpkin overnight oat takes just about 15 minutes to put together and is a great make-ahead breakfast for busy mornings or while on the go!
Loaded with good-for-you ingredients like chia seeds, Greek Yogurt, and oats. Overnight oats are a go-to breakfast recipe for most households because you can make them the night before, and they’re just so convenient!

Before you get started tips
- Use canned pumpkin puree and not pumpkin pie filling: So many make this mistake of grabbing pumpkin pie filling, which already has sugar and spices added to it.
- Use the spices: I added pumpkin pie spice, but you can use cinnamon, nutmeg, and a pinch of ginger or cloves instead.
- Don’t skip the chill time: overnight oats need at least 4 hours (ideally overnight) for the oats to soften and flavors to meld. Make them the night before.
Ingredients you will need
These are just a list of ingredients you will need to make this overnight oat. I’ve attached the full measurements further down below in the recipe card.

- Brewed coffee: You need it to be chilled. So make this ahead.
- Milk of choice: Any milk works. I use a lot of 2% milk in my recipes, but almond milk works just fine.
- Greek yogurt: I used plain Greek Yogurt. Vanilla-flavored is also fine to use.
- Pumpkin puree: The canned kind you get from the store is perfect. Just make sure you are getting 100% pumpkin puree and not pumpkin pie mix.
- Pumpkin pie spice mix: This is important if you want that pumpkin pie flavor.
- Vanilla extract: For added flavor. If using vanilla Greek yogurt, you can skip it.
- Sweetener: I used maple syrup, but honey or agave will work great here too.
- Chia seeds: Get your favorite brand. I get mine from Costco. It is way more affordable for the amount you get. I get the Nature’s Intent organic chia seeds.
- Quick oats: get the gluten-free if necessary. Rolled oats will also work for a more chewy texture. I do not recommend using steel-cut oats.
- Mini dark chocolate chips: you can get sugar-free or dairy-free.
How to make pumpkin overnight oats
Here is a video and step-by-step process of how to make these overnight oats with pumpkin puree.

1️⃣ Brew the coffee
First, brew the coffee to your liking, strain it, and allow it to cool.
✏️ While you wait for the coffee to cool down, set up the other ingredients
2️⃣ Make the liquid Pumpkin base
Next, in a medium bowl, combine coffee, milk, yogurt, pumpkin puree, pumpkin spice, vanilla extract, and maple syrup. Mix until well combined.
✏️ To make it plant-based: use almond milk and dairy-free chocolate chips.
3️⃣ Add the oats and chia
Then, add in the oats, chia seeds, and chocolate chips. Give it a good mix to combine everything. Divide the mixture into 4 mason jars or air-tight containers.
✏️ You can leave everything in the bowl and cover it till the next day before you divide it up. It’s up to you.
4️⃣ Refrigerate and serve
Seal the jars and refrigerate overnight to allow them to set. Before serving, add a spoonful of yogurt on top, and garnish with extra chocolate chips.

Overnight oats can last up to 5 days in the fridge. Store in a tightly sealed container and enjoy every morning for a few days.
The right answer would be no. You can’t use steel-cut oats to make overnight oats. They are much harder and won’t soak in with the milk overnight. You will be left with hard and crunchy oats. Do not use steel-cut oats. Go for rolled oats.
Yes. You can always blend overnight oats for a smoother texture. I would wait on adding the chocolate chips if you want to blend the oats first.
Overnight oats are meant to be enjoyed cold, and thus, the convenience of grabbing them in the morning and digging right in. If you would like to warm it up, you can do so in the microwave for 30-60 seconds.
